Le cuisinier romain : ars ou ministerium ?

The characteristics of Roman cooks vary more than is generally stated in the historiography. The caterer of the macellum preceded the cook of great aristocratic houses, but they also coexisted at some point. Under the Roman Empire, both chefs of restaurants (popina) and cooks for the Imperial House were prominent figures. They were disregarded owing to their social (slavish origin) and moral (linked to luxury) backgrounds but at the same time they played a key role in promoting aristocratic and imperial distinction. Consequently, the cooks argued that their activity was an ars that required talent, and drew on theoretical knowledge taught in schools, as opposed to the aristocrats who considered it a basic domestic chore (ministerium).
Les profils des cuisiniers romains sont plus divers que l’historiographie ne le dit communément. Le cuisinier-traiteur du macellum a précédé le cuisinier domestique des grandes maisons aristocratiques mais a aussi coexisté avec lui. Sous l’Empire, le cuisinier de restaurant (popina) et le cuisinier de la Maison impériale ont occupé une place importante. Un même mépris les englobait pour des raisons sociales (origine servile) et morales (lien avec le luxe) mais leur rôle dans les stratégies de distinction aristocratique puis impériale leur assura une certaine promotion. Les cuisiniers tentèrent alors de défendre l’idée que leur activité était un ars, nécessitant du talent, appuyé sur un savoir théorique, enseigné dans des écoles, mais les aristocrates le rabaissaient au rang de ministerium, simple fonction servile.
